Valentine's Velvet Pancakes

Roses are red, violets are blue, oh look, our pancakes are red too! So what is Red Velvet exactly? Red Velvet cake comes from the South. It is a butter cream cake that has cocoa and hints of beet or radish and  this is what makes it red. Wouldn't you know, it is amazing as pancakes too! Your kitchen will smell of cupcakes as you make Valentine's brunch in just minutes! 

Here are 2 recipes; one Angel (lighter), and one Devil (decadent)

Serves 2

ANGEL Ingredients: Dusting of powdered sugar, greek yogurt, berries and mint; so fresh!

1 1/2 C Red Velvet Bliss Batter 

1 TBS Non-Fat Chobani Greek Yogurt 

4 Fresh Strawberries

1 Sprig Mint


DEVIL Ingredients: Drizzle of melted white and dark chocolate, shaved dark chocolate, and whipped cream; why not? It's Valentine's Day! 

Serves 2

1 1/2 C Red Velvet Bliss Batter + 

1 Bar 86% Dark Chocolate * Reserve 1 square to shave as garnish

3 TBS White Chocolate Chips

1/4 C Heavy Cream for Ganache + 1/4 C for Whipping

1 Sprig Mint


1. Scoop 6- 1/4 scoops of Red Velvet Bliss Batter onto heated non-stick griddle. When tiny air bubbles begin to form, flip.  

ANGEL: Enjoy with a dollop of greek yogurt, sliced strawberries, and sprig of mint!


DEVIL: Go all out decadence with dark and white chocolate ganache and a dollop of whipped cream.  

1. In a microwavable bowl, melt heavy cream and dark chocolate together for 30 seconds. Whisk until smooth and glossy. Repeat with white chocolate. 

2. Whipped 1/4 C chilled heavy cream with powdered sugar until pillowy.  

3. Drizzle pancakes with dark chocolate, then white. Dollop with whipped cream. Shave dark chocolate and garnish with a sprig of mint. Love is messy- thank God for pancakes!
